Today I am going to blog about my sweet grandmother's Rhubarb Bar recipe.
She passed away many years ago and I still miss her so much. But, at this time of year I pull out a few of my special items that she passed on to me, and make her bars. It makes me feel like she's here with me, if only for a little while.
This is extra special to me because I have two of her rhubarb plants, her pretty glass pan that she used for making rhubarb bars and her amazing recipe.
Here is her recipe.
Crust:
1 cup flour
1/2 cup of butter (softened)
5 tsp powdered sugar
Mix ingredients in the bottom of 8 x 8 pan. Press in to pan. Bake at 350 for 12 minutes.
Filling:
1/4 cup flour
1/4 tsp baking powder
1/2 tsp salt
1 tsp vanilla
2 beaten eggs
1 1/2 cups sugar
2 cups rhubarb
Mix well and pour over crust. Bake at 350 for 35 minutes.
It is super yummy if you serve it while it is still hot with vanilla ice cream on it, but is just as fabulous if you eat it plain.

This recipe is so easy and you probably have all the ingredients in your kitchen, except the rhubarb.
